If you're a fan of polenta you'll love these millet cakes. Millet is an inexpensive grain that's rich in B vitamins (especially niacin), B6, folic acid (great for pregnant women!), calcium, iron, potassium, magnesium (most Americans are deficient in this!) and zinc. It's also gluten free.
