Onion Marmalade

Do not let the title put you off, this stuff is absolutely delicious. Okay, so maybe not the ideal application for your peanut butter and jelly sandwich but it's uses extend beyond PB & J. It is used extensively in Europe. Lather it on some bread, put some goat cheese or brie on top and stick it in the oven until the cheese begins to melt. It is a guaranteed happy marriage in your mouth. Or use it as a spread for your hamburger or sandwich to give it a gourmet touch. I fell in love with this in Spain, I know that once you try it, you will too!

Onion Marmalade

1 1/2 pounds onions (5 big onions approximately)
1 stick butter (or a little less)
Half a cup white sugar
1 cup dried grape
1 cup strong red wide - I would suggest a Cabernet
1/3 cup wine vinegar - I used a caramel wine vinegar from Corsica...
Salt, Pepper

*Note: This recipe uses raisins but I would omit those as I have not ever had onion marmalade with them.
