Fruit salsa does not have to be something you only eat at a high end Mexican restaurant. Add one of these salsa to your Cinco de Mayo menu. They are also nice a top a piece of fish or chicken. I like my mango-avocado salsa with diced chicken in a lettuce wrap.
Mango Avocado Salsa:
Recipe by Leah Rodrigues
1/4 cup Cilantro chopped
1/4 Red Onion Chopped (1 small Onion)
Salt and Pepper to taste
Optional: A few drops of cayenne based hot sauce like Tabasco
Cut red onion into small dice. Cut mango and avocado into medium cubes. Finely chop cilantro. Seed and finely dice the jalapeno pepper (if you like more spice, add a few drops of cayenne based hot sauce. The spice lies more in the rib (the white part) then the actual seeds of the jalapeno pepper. Add the juice of 1/2 to 1 lime depending on how juicy it is (sometimes they can be very stingy).* Mix all ingredients together in a large bowl. Add salt and pepper to taste. Serve with tortilla chips
Note* Roll your lime under your palm for a few seconds or put it in the microwave for a 10 seconds and it will most likely give you more juice.
Note** The photo shows tomatoes, feel free to add them if you like.
