Nothing says "Happy Mother's Day!" quite like breakfast in bed, and what says breakfast better than Belgian waffles? And being gluten free doesn't mean you can't start a new family tradition. Gluten Free Belgian Waffles from Artisanal Gluten-Free Cooking by Kelli & Pete Bronski 1 3/4 cups Artisan Gluten Free Flour Mix 1 tablespoon gluten free baking powder 1/4 teaspoon salt 2 eggs, separated 1 3/4 cups milk 1 teaspoon gluten free vanilla extract 1 stick (8 tablespoons) salted butter, melted Combine dry ingredients in a large bowl. Add the egg yolks, milk and vanilla, mix well. Add melted butter and mix until just combined. In a separate bowl, mix the egg whites until stiff peaks form (a handheld mixer works great for this.) Tenderly fold the egg whites into to the batter. Cook a waffle according to your waffle maker's instructions, but don't open the waffle iron (no peeking!) until the waffle is fully cooked. Remove the waffle and repeat - makes 5 waffles. Cooking for a crowd? Place the waffles in a single layer on a baking sheet (stacking leads to soggy waffles) and place in a warm (170-200 F) oven to keep waffles warm and crispy before serving!
