Gluten Free Belgian Waffles

Nothing says "Happy Mother's Day!" quite like breakfast in bed, and what says breakfast better than Belgian waffles? And being gluten free doesn't mean you can't start a new family tradition. Gluten Free Belgian Waffles from Artisanal Gluten-Free Cooking by Kelli & Pete Bronski 1 3/4 cups Artisan Gluten Free Flour Mix 1 tablespoon gluten free baking powder 1/4 teaspoon salt 2 eggs, separated 1 3/4 cups milk 1 teaspoon gluten free vanilla extract 1 stick (8 tablespoons) salted butter, melted Combine dry ingredients in a large bowl. Add the egg yolks, milk and vanilla, mix well. Add melted butter and mix until just combined. In a separate bowl, mix the egg whites until stiff peaks form (a handheld mixer works great for this.) Tenderly fold the egg whites into to the batter. Cook a waffle according to your waffle maker's instructions, but don't open the waffle iron (no peeking!) until the waffle is fully cooked. Remove the waffle and repeat - makes 5 waffles. Cooking for a crowd? Place the waffles in a single layer on a baking sheet (stacking leads to soggy waffles) and place in a warm (170-200 F) oven to keep waffles warm and crispy before serving! Artisan Gluten Free Flour Mix Makes 3 cups 1 1/4 cups brown rice flour 3/4 cup sorghum flour 2/3 cup cornstarch 1/4 cup potato starch 1 tablespoon + 1 teaspoon potato flour 1 teaspoon xanthan gum
