Make Mom Frittata For Brunch

A frittata is an egg based dish such as an omelet, quiche, or Spanish tortilla. You can add whatever ingredient you like, literally. This is a great Mother’s Day brunch dish because you can prep the veggies (except the potatoes because they will turn brown) ahead of time and then in the morning mix it all together and stick it in the oven. I would serve this dish with grilled asparagus wrapped in prosciutto and peach bellinis.

frittata

2 sm. size eggplants, thinly sliced
12 eggs
Salt pepper to taste
Sprigs of fresh thyme to taste
½ teaspoon salt
½ cup olive oil
2 baking potatoes, peeled and thinly sliced
1 lg. onion, peeled and thinly sliced
2 sm. zucchini, thinly sliced
2 red peppers, minced
