The weather is warming up and what better way to take advantage of it then by making gelato. The flavor of Mascarpone is similar to that of cream cheese but a little less tart. Strawberries and balsamic vinegar have a natural affinity. Macerating the strawberries in the vinegar enhances the fruit's flavor. Feel free to add other berries such as blueberries or raspberries.

Mascarpone Gelato with Balsamic-Macerated Strawberries
1 pint ripe strawberries washed, hulled, and sliced
2 tablespoons balsamic vinegar
4 tablespoons sugar
1/2 cup simple syrup
4 egg yolks
1 pound mascarpone
1/4 cup light corn syrup
1 cup milk
2 tablespoons lemon juice
