This gorgeous eight-layer asparagus cake by Rosie of Sweetapolita is an update to a three-layer version she made last fall for her sister-in-law Mary, who'd grown sick of eating asparagus while training for a fitness competition. The fondant spears and tips look just like real asparagus; they're even finished with petal dust for added realism.
The asparagus cake interior is made of chocolate cake and dark devil's food cake with vanilla swiss meringue buttercream. Rosie compared the process of making the asparagus spears to creating sugar flowers, writing, "each one [is] unique and full of organic details and personality."
