Paella is known as Spain's national dish. It can be made a hundred different ways, vegetarian, seafood, or with squid ink. One ingredient is always essential- saffron. Saffron gives the rice a beautiful golden hue. I prefer a mix of seafood and meat because I want the best of both worlds. Paella is a party food so make up a big batch and set it in the middle of the table and let guests help themselves.

1 ¼ cups low sodium chicken broth
1 pinch saffron threads
1 tablespoon extra virgin olive oil
1 small onion, diced
2 cloves garlic, minced
1 small red bell pepper, diced
2 ounces sausage, Andouille or Spanish chorizo is best (if you can find it)
½ cup rice
6 large shrimp
6 whole mussels
salt and pepper, to taste
1 tablespoon fresh parsley, minced
