Today, chef Jose Andres announced his new pop-up restaurant, the America Eats Tavern, which will open on July 4 in Andres' Washington, D.C. restaurant Cafe Atlantico. The eatery will celebrate the history of food in the U.S., and some of the proceeds will benefit the National Archives.
America Eats Tavern will run in tandem with a National Archives exhibit that opens June 10 called "What's Cooking, Uncle Sam? The Government's Effect on the American Diet." Forbes reports that Jose Andres is one of the exhibit's advisors.
