
In celebration of the International Greek Festival, I felt inspired to post one of Greece’s iconic snacks. Spanakopita or spinach and feta pie is a Greek savory pastry with spinach, feta cheese, onions, and eggs. The filling is wrapped or layered in phyllo, a thin and flaky dough often used in Greek and Middle Eastern cooking. These delightful pastries are served in individual triangles or in large rectangles. Although admittedly untraditional, I like to add golden raisins for a bit of sweetness.
Ingredients:
¼ cup Shallots, minced
2 tablespoons Garlic
4 tablespoons Butter
3 tablespoons Flour
½ cup White wine
½ cup Heavy whipping Cream
2 package Frozen Spinach, thawed, squeeze excess water
8 ounces Feta Cheese
3 Eggs
3 pkgs. Phyllo (There are 2 pkgs. a box)
1 pound Butter
