Michelangelo once said that he merely chipped away the stone to reveal the masterpiece already within. Well, I don't know about that humility, but what I do know is that when you cook with the freshest, in-season ingredients, little coaxing is needed from one's hand (culinary artist or not) to result in a wondrous dish.
Below are a few of my favorite seasonal soups that require few ingredients and little of your time, yet all are masterpieces in their own right. Mmm, nature truly is a work of art!
Light and Chunky Chicken Soup
Basmati rice, rosemary, and basil make this soup a simple pleasure.
Spring Asparagus Soup
Sauté, pureé, sip, yum!
Minted Pea Soup
Go for fresh peas and mint for a full taste of spring!
Creamy Leek and Potato Soup
A French classic (vichyssoise). Equally delicious served warm or cold.
Carrot Soup With Ginger
Ginger adds a lovely punch of flavor to this creamy carrot soup
