Thai Inspiration for Meatless Monday

I think I could eat Thai food every day and never tire of those flavors. The trouble is that many restaurants use low quality oils, pesticide-laden veggies, and other additives. Instead, let's make Thai a healthy affair by bringing these exotic flavors into our own kitchens. 

Gluten Free Spring Rolls 
Fresh veggies and classic Thai flavors. Perfect for summer picnics or potlucks.

Yellow Curry with Red Rice 
Add a bunch of kale, chard, or collards to this tasty curry for an extra nutrient punch. 

Raw Pad Thai 
This Thai restaurant staple gets a modern update by going raw. 

Sauteed Baby Thai Eggplant 
So easy to prepare and works well with any Thai feast. It does contain fish sauce, but you're in luck, there is a vegetarian substitute.

Sweet Potato Peanut Soup
MMM, peanuts and sweet potatoes together in one soup. The Batats are the sweet potatoes. Feel free to toss some greens in there for an even healthier meal.
