
Fattoush is the Lebanese cousin to Italy's panzanella salad. This salad was made as a way to utilize pieces of stale pita. In this recipe, grilled pieces of pita are combined with fresh vegetables and a tangy dressing. You can use whatever seasonal veggies that are available in your region. This would be a nice accompaniment to some garlic chicken or splendid on its own.
Ingredients:
4 zucchini
2 peppers, red and/or yellow
1 ½ cups cucumber, peeled and chopped into ¾ inch cubes
1 large tomato, chopped
¾ cup green onions, chopped
1 cup pitted or halved kalamata olives
½ cup fresh chopped mint
¼ cup chopped parsley
¾ cup crumbled feta cheese
¼ cup olive oil
1 juicy lemon, squeezed
1 teaspoon cumin
