
These spring rolls are native to Vietnam. These delicious rice paper bundles full of shrimp, mint, lettuce, and rice noodles embody Vietnamese cuisine- full of contrasts. They are soft and crunchy, colorful yet plain, delicate and satisfying. Make an assembly line and these spring rolls can be made in a flash. Serve them with peanut sauce.
Ingredients:
1 package dried rice rolls (also called "rice paper")
1 cup cooked chicken, turkey, shrimp, baked tofu or seitan, cut into bite-size pieces and tossed in 2-3 Tbsp. fish sauce or soy sauce
1 cup fresh cilantro leaves
1 cup fresh sweet basil, roughly chopped
½ large cucumber, sliced into thin pieces
1 carrot, grated
1 cup cabbage (shredded)
