The Mighty Muffaletta

The Mufaletta iis not just a sandwich, it is the sandwich of all sandwich. It has even been called the "best sandwich in America" by TODAY food editor Phil Lempert.  It is one of those marvelous sandwiches where there is no way it's going to fit into your mouth.  The mufaletta is a staple in Louisiana, especially in New Orleans.  Muffaletta makers take this sandwich very seriously with stacks of meat, cheese, and an olive salad.  Perfect for a party or a family lunch, you should make some room for this big boy this summer.

The New Orleans Muffaletta

Ingredients:

7 ounces jar small green olives

16 ounces jar giardiniera mix, roughly chopped

3 ounces jar cocktail onions, roughly chopped

2 ounces capers

¼ cup chopped banana peppers (or pepperoncinis)

½ cup diced carrots

½ cup diced celery

2 cloves garlic, minced

⅓ cup olive oil

1 Tb. red wine vinegar

1 Tb. Italian seasoning

½ teaspoon pepper

1 round italian bread loaf

½ pound deli sliced ham

½ pound deli sliced salami

½ pound sliced provolone cheese

½ pound sliced swiss cheese
