For today's picnic potluck I made a tapenade that turned out to be so simple and flavorful, that I had to share.
Black Olive Tapenade
2 cups pitted black olives
1 med-large Heirloom tomato
1/2 cup juice or oil from the olives
1 shallot
fresh parsley

Directions: Put olives and shallot in food proccesor and chop. Dice tomato. Mix all ingredients in a bowl. Voila, tasty tapenade!
Enjoy! |
