Mu Shu Pork

I love this Northern Chinese dish whether it is wrapped up in Chinese pancakes or an accompaniment to rice.  The word mu shu means "cassia blossom."  The fluffy yellow scrambled eggs are supposed to simulate the blossom.   This is an easy meal that can be enjoyed any night of the week.

Mu Shu Pork

8 ounces Pork tenderloin, cut into 1 ½" strips

2 Tablespoons Low-sodium soy sauce

2 tablespoons Marsala wine, sweet

2 teaspoons Sugar

1 tablespoon Dark sesame oil

Salt and pepper

2 tablespoons Peanut oil

2 teaspoons Fresh ginger, slivered

8 whole scallions, chopped

1 small Savoy cabbage, cored and sliced

2 whole carrots, peeled and grated

10 whole shiitake mushrooms, sliced

6 Chinese Pancakes
