I have a love/hate relationship with casserole. As a child, my mom was fantastic about taking leftovers and making them into something else-casserole. Often the resulting dish was pretty tasty, although nameless. She referred to everything as a concoction. You have to love that spunk.
This breakfast casserole is easy enough for a young cook to manage with just a little help. Make it the night before and pop into the oven in the morning. Great for sleepovers!
