
When we think of a pasta salad, we immediately envision Italian or Mediterranean flavors. I would venture to say that Asian noodle salads are strong competitors. The flavors in this salad are bold and satisfying. Soba noodles are of Japanese origin and are made with a mixture of buckwheat and wheat flour. If you cannot find soba noodle feel free to substitute with another Asian noodle. This is an easy summertime meal that will please the palate.
1 bunch broccoli cut into florets
3 scallions, chopped
1 red bell pepper, cut into strips
½ pound soba noodles
2 teaspoons vegetable oil
2 tablespoons sesame oil
1 tablespoon Chinese hot chili oil
2 tablespoons soy sauce
1 tablespoon cider vinegar
1 garlic clove, minced
1 teaspoon sugar
8 ounces deli roast beef
