This seasonal salsa is loaded with heart-healthy monounsaturated fat from the avocado, and protein and complex carbs from the black beans. A perfect summer time snack, taco topper, or side for your morning eggs.
Black Bean Avocado Salsa
2 can black beans, rinsed and drained
2 fresh sweet corn cobs
2 tomatoes, diced
1 red onion, chopped
2 avocados, diced
4 tbsp fresh lime juice
2 tbsp olive oil
1 tbsp apple cider vinegar
cilantro
salt & pepper, to taste
garlic, to taste
