5 Summertime Sunday Foods

We try to make Sunday dinner a little more special than the rest of the week. In the heat of summer, this can be difficult. Here are 5 quick and easy foods that are special enough for a Sunday meal, yet light and simple enough to be appealing for summer. 

Pasta Salad
Don't roll your eyes at me! This is a fantastic recipe, able to be tweaked up or down, according to your budget and  your family's taste. Think pasta salad, tablecloth, fancy plates and good bread. Heaven!

Skewered Chicken
Easy and let's face it; Fun. Bring fun back to the table with chicken on a stick. Heck, the whole meal is on a stick. How fun is that? 

Falafel
Ok, I admit this may not be the easiest dinner to throw together. The assembly is easy, but does take time. I have eaten scores of these at Grateful Dead concerts, err..nevermind. 

Greek Feta and Beef Wrap
Here is a little secret: When you really don't feel like making a big dinner, make wraps. I put out dishes of everything and let the family make their own. 

Homemade Tortillas
I realize, this is a tortilla and not a complete meal, but make these and fill them with everything in the fridge. Another way to serve something homemade and yet remain easy for the cook. Admittedly, they are tasty enough to eat plain but I don't advise doing that unless you are a teenager, or an athlete.
