Scotch Eggs for Breakfast

Yesterday my friend asked me if I had ever eaten a scotch egg. I didn't even know what a scotch egg was so I did some research.  Turns out that this fried boiled egg looks pretty delicious.  This protein rich breakfast would delight anyone who is a fan of sausage and eggs.  Try making scotch eggs this weekend for your family, let me know how they turn out.

Scotch Eggs

Ingredients:

1 pound bulk sausage

⅓ cup bread crumbs or corn meal

1 egg, beaten

8 hard boiled eggs

I ate these scotched eggs for years. I spent my early career in the Air Force and was in England and Europe for almost 13 years. I haven't had them or made them in quite some time. I'm gonna attempt it by baking them (instead of frying) after the sausage and breading are firmly packed on. Remember that the sausage shrinks so you've gotta lay it on a bit thick before you roll it in the breading. Enjoy!
