Kool Key Lime Pie

Key lime pie is an American dessert made from blending key lime juice and zest, sweetened condensed milk, and eggs into a graham cracker crust.  Key limes are the size of a walnut and sometimes difficult to find.  You can substitute with regular limes or sometimes you can find bottled key lime juice (just be sure there is no added sugar).  This pie can be made ahead of time and kept in the fridge until it is time to be served.  I promise it will be devoured in five minutes.

Key Lime Pie

Lime Filling:

4 teaspoons lime zest

½  cup strained lime juice (from 3 or 4 limes)

4 large egg yolks

1 (14 oz.) can sweetened condensed milk

Graham Cracker Crust:

9 graham crackers (5 oz), broken into rough pieces

2 tablespoons granulated sugar

5 tablespoons unsalted butter, melted and warm

Whipped Cream Topping:

¾ cup heavy cream, chilled

¼ cup (1 oz.) confectioners’ sugar

½ inch lime sliced paper thin and dipped sugar (optional)
