Okra is a mucilaginous summer veggie, which means it's soothing and healing for the mucus membranes, including the gut. It also happens to be loaded with fiber, and is a tasty to addition to soups and stews. Here is a Greek take on summer stew. It's inexpensive and nutritious, making it a perfect dish for thrifty Thursday.
