
Tamale Pie was one of my mother's famous dishes growing up. How can a kid resist layers of cheese, tomato sauce, and ground meat topped with cornmeal. As casseroles go, this is still my favorite. There are no strict rules with this dish so play around with it by adding different ingredients. If I were to make a vegetarian version I would add tons of different beans, possibly black, kidney, and pinto. Tamale pie is a dish that everyone will love, even the kids.
Ingredients:
1 ½ pounds hamburger
1 med. size onion
2 cups stewed tomatoes
1 sm. can tomato sauce
2 cups whole kernel corn
1 cup sliced ripe olives
1 teaspoon salt
¼ teaspoon pepper
1 tablespoon chili powder
1 clove garlic, minced
¼ cup green pepper, chopped
1 ½ cups milk
½ cup cornmeal
2 tablespoons butter
1 teaspoon salt
2 eggs, lightly beaten
1 cup shredded cheese
