Gajar ka Achar - Instant "Pickled" Carrots by Just Home Made - before and after photos; as delicious as they are gorgeous!
In addition to providing a super delicious, quick and easy recipe, Just Home Made has some of the best food photography around! (In case you couldn't tell!) This traditional Indian recipe does not involve actual pickling or fermentation (hence the "instant" part!) but they sure taste like it! All the crispy-crunchy goodness of freshly-picked carrots with the tastiness of pickling spices - simply delectable. You may never prepare carrots the same way again!
Gajar ka Achar - Instant "Pickled" Carrots
Serves 2-4
Ingredients
7-8 small slender Carrots (I used farmer’s market rainbow carrots)
2 long green chillies, slit lengthwise, seeded optionally
1 tsp yellow mustard, freshly crushed
1 tbsp olive oil
1 tsp lemon juice
Pinch of turmeric
Pinch of sea salt
