An investigation by Al Jazeera English shows how easily people in China can manipulate food ingredients through the use of chemical additives. Apparently, restaurants throughout the country buy cheap pork then alter it to resemble the more expensive beef. There is little enforcement of food safety from producers so the practice often goes undetected.
Scary stuff. At least the report profiles an organic cooperative outside of Beijing. There is hope in China.
