This awesome graphic and article from the Boston Globe is a handy little guide to all things bacon. Do you know the difference between country bacon and standard? How about what makes pancetta versus Canadian bacon? No worries, this guide has it all!
For instance, Irish and English bacon is taken from the loin, and the meat is surrounded by a ring of fat. Then it's cured and/or smoked.
The graphic is a really helpful way to identify what you're looking at and shows you the different cuts of bacon.
But fair warning! You'll want a big old BLT after staring at the picture for too long!
