The Cornucopia Institute has put together this handy dandy chart for choosing the best quality eggs. They used a rigorous set of standards to come up with their rating scale. Is it a family farm? What did the chicken eat? How was it cared for? Of course if you have chickens or can get eggs from your neighbors, that's ideal.
