Summer squash grows like a weed during it's season, and the abundance causes the cost to go way down. Whether you pick them up from your local farmer, neighbor, or your own backyard, it's the ultimate Thrifty Thursday ingredient.

Roasted
For breakfast serve with eggs and a corn tortilla. Take it to work in your thermos with some leftover chicken and sweet potatoes. For dinner, add to quinoa and serve with your favorite protein. The point is, this is one versatile and simple dish.

Chili
One pot dishes are ideal for saving time and money. Once the chili is cooked, the leftovers can be frozen for future lunches.

Pancakes
Whip up a big batch and eat as a snack, side dish, or breakfast on the go.
