I have so many favorite dishes, but this is my all time favorite panini in the world. I know that seems like an outlandish claim but wait until you try it. I first had this panini at Il Tramezzino in Los Angeles. I finally decided that instead of paying $10 a panini, I would re-create it at home. The results were a success and I have been making it ever since.
Ingredients:
1 cup fresh basil leaves
1 clove garlic
½ cup good quality mayonnaise
3 tablespoons olive oil
1 boneless, skinless chicken breast
¼ cup oil packed sun-dried tomatoes, drained and sliced
½ avocado, sliced thinly
3 tablespoons olive oil
