
I'll admit, I start to freak out when we're out of fish sauce. Strange, I know. On its own, fish sauce has to be the nastiest smelling thing one willingly allows in a kitchen, but when combined with fresh lime juice and sugar you have nothing short of a flavor miracle. Mix this sauce with fire hot chiles and drizzle it on any Thai salad. One of my favorites is Chicken Larb Gai (pronounced lob-guy), or more simply put: Thai Chicken Salad. This classic Thai salad has a wonderful medley of flavors and makes for a perfect dinner on a warm summer evening. Make extra dressing, you'll want it on hand! Use this same sauce on Thai Beef Salad too!
