
Chicken salad sandwiches are an easy lunch or dinner. If you are worried about the carbs, skip the bread and place the chicken on a bed of butter lettuce. This salad has all the components you could ever want in a dish, sweetness from the grapes, crunch from the almonds, and heartiness from the chicken. It is perfect for your fourth of July picnic, just pack the sandwiches in your basket and eat them while watching the fireworks burst.
Ingredients:
3 cooked chicken breasts, chopped
1 stalk celery, chopped- about ¾ cup
2 green onions, chopped
½ cup seedless grapes, halved
¾ cup dried cranberries
½ cup toasted almonds
¾ cup mayonnaise
1 tablespoon celery seeds
1 teaspoon each: paprika and salt
Coarsely ground black pepper, to taste
