
Sometimes you just want to eat something simple. What could be better on a summer evening than slices of garden tomatoes nestled between sweet basil and fresh mozzarella? Frankly, there are few things I find as delicious and refreshing as the traditional Italian caprese salad. This dish is all about the quality and freshness of ingredients. It just goes to show that if you start with the best ingredients, you don't need to do much else.
Ingredients:
3 vine-ripe tomatoes 1/4" thick slices
1 pound fresh mozzarella ¼" thick slices
20 fresh basil leaves - (to 30)
Extra-virgin olive oil for drizzling
Coarse salt to taste
Freshly-ground black pepper to taste
