
Chicken adobo is a staple in Filipino households, every family has their favorite recipe. This dish requires few ingredients and is simple to make. Large pieces of chicken are simmered in vinegar and soy sauce until tender. I love chicken adobo served on a bed on rice and draped with extra sauce. If you have leftovers, stuff them into sweet rolls to make Filipino sliders. This week, try making chicken adobo for dinner.
Ingredients:
8 pieces chicken (breasts,legs, thighs)
3 cloves garlic
1 ½ cups vinegar
1 teaspoon peppercorns
1 cup water
2 bay leaves
3 tablespoons canola oil
