
Kraft has taken a page from many mothers' notebooks and surreptitiously added vegetables to a classic kids' comfort food with the KD Smart Macaroni & Cheese Dinner. The boxed mac 'n' cheese features a half-serving of freeze-dried, powdered cauliflower in each cup.
"We know moms are always looking to please their kids and wanting to not make meals a big ordeal, insofar as being able to get them to eat their food," said Alberto Huerta of Kraft. "Mom is looking for ways to sneak veggies into her kids' diet." Kraft achieves this by replacing some of the flour used to make the macaroni noodles with the freeze-dried, powdered cauliflower.
While some food industry experts argue that Kraft's effort is better than nothing, others say that freeze-drying the cauliflower robs it of essential nutrients. "What a silly idea," said Marion Nestle, a professor at New York University.

I'm with Marion Nestle. I also love how Kraft is pretending to do this for the moms and for the betterment of children's health. I guess it has nothing to do them attempting to reverse (or at least abate) the decline in sales they've experienced in recent years...
