
This refreshing roasted beet, fig, and orange salad is the perfect way to cool off on a hot summer's day. Roasting beets brings out their natural sweetness and they pair perfectly with the fruity figs and the citrusy orange segments. Goat cheese also works well with this salad if you do not have any feta on hand. This light and flavorful salad works well as a side dish but could also be the main star of the meal.
Roasted Beet, Fig, and Orange Salad
Ingredients:
8 small beets
6 fresh figs, washed and cut in half
1 orange, peeled and sectioned
3 cups baby spinach, washed and dried
½ cup feta cheese, crumbled
grey sea salt
freshly cracked black pepper
honey mustard vinaigrette (recipe follows)
fig balsamic reduction (recipe follows) or excellent quality aged balsamic vinegar
