Summer berry pudding is a classic English dessert made with stale white bread and cooked berries. You can use a combination of berries such as strawberries, raspberries, and blackberries or just your favorite berry. If you don't have stale bread, leave a few pieces out the night before so that the slices will dry out. For a sweeter berry pudding use angel food cake or pound cake. IThe bright red berry sauce is also delicious over ice cream or served with a biscuit and whipped cream, shortcake style. This is a great way to use the summer fruit and your diners will be impressed with such a beautiful dessert.
