
We usually think of corn tortillas as something that comes in a stack from the grocery store. However, homemade tortillas are an individual treat that are easy and rewardingly delicious. Fresh corn tortillas are thicker and chewier than the store-bought variety. In my opinion, the pre-packaged tortillas are functional but uninspired. Homemade tortillas add flavor and texture to the meal experience. Making corn tortillas at home requires few ingredients, masa, water, salt, and sometimes a little fat. The key to perfect tortillas is the texture of the dough. You want to make a smooth and moist dough whose edges don't crack when rolled. Freshly made tortillas will convert any common meal into the realm of the spectacular.
Ingredients:
2 cups masa harina
1 teaspoon salt
1 ¼ cups hot water plus 2 to 3 tablespoons
1teaspoon lard
