A seasonal favorite, garlic scapes are the tops of the garlic plant - the long curling stems punctuated by purple chive-like blossoms. Super tasty and usually available on the cheap in spring and summer, scapes are much like super-sized chives, with a distinctive - but not overpowering - garlic flavor. While I often throw my scapes on the grill with olive oil and asparagus spears, here is a fantastic dairy free (& gluten free!) soup featuring their signature flavor!
