Chickpeas have dozens of nicknames: garbanzos, ceci beans, chana, Indian peas -- and my personal favorite, "hummus beans" so named by my Israeli high school history teacher. Packed with protein and fiber, chickpeas are one of the oldest cultivated plants with remains in the Middle East dating back 7,500 years! In addition to being quite nutritionally sound and the basis for hummus (which I'm convinced is a miracle food), chickpeas are incredibly delicious and quite versatile- here are three of the best recipes to prove it!
