If you are on a gluten free diet and can still eat corn, then polenta is a perfect treat. This colorful casserole uses a bounty of seasonal produce and is sure to be a crowd-pleaser.
When buying corn, make sure that it's organic. The majority of commercial corn in the US is genetically modified, and research shows a direct link between GMOs and allergies.
