Who knew that a few broccoli plants would take over the garden?
Usually it is too late in the year to worry about the broccoli harvest. Once the main head is harvested, we might get a few side shoots, but for the most part the broccolifest is over by now. This year the late spring, combined with excessive rain, has made it a broccoli heaven.
This Veggie and Cheese Casserole, is a tasty way to use up at least 2 cups of broccoli, or 1 head of it. Any vegetables work great. I have used beets, green tomato, peppers and carrots - any combination is a big hit. E
