When life hands you eggplant, make pizza!
Here is a delicious idea to make pizzas(probably my favorite food in the world), out of eggplant slices. The eggplant provides that meaty texture to hold all the pizza bits, and grilling it bring that special kick of flavor to the dish. If your eggplants are young, keep the peels on, otherwise, peel them first. Enjoy!
