Any soup, stock, or sauce recipe almost always starts out by sauteing onions.  The onion is the flavor base to an endless array of dishes.  I can't think of a single country or culture that does not use an onion or one of its cousins in their daily cooking.  I thought today I would pay tribute to this most versatile of ingredients.  Here are 5 recipes that highlight the onion's flavor and make it the star.
