
One of my all-time favorite foods, combining two key food groups ('fried things' and 'cheese'), chiles rellenos is a special occasion dish -- not something you'll find at an everyday taqueria. The grandmother of jalapeno poppers, chiles rellenos is a multi-step recipe that boils down to peppers stuffed with cheese, battered and fried -- but they are so much more than that! Mildly spicy Poblano chiles are roasted (over your gas range, barbecue or broiler), peeled & deseeded, stuffed with cheese (queso asadero or Monterey Jack) then dipped in an egg-based batter and fried until golden brown. Serve with a healthy scoop of traditional tomato-onion sauce.
