
This recipe for minted snap peas is super simple and delicious. All you need are a few ingredients and a pot with boiling salted water. The key to keeping the snap peas bright green is to "shock" the them immediately following their extraction from the hot water. This means having a bowl of ice water ready to dunk the hot peas into. This will keep the peas from being overcooked and preserve their beautiful color. You can make this dish in minutes and will be a perfect accompaniment to any meal.

1 ½ pounds Sugar snap peas, trimmed
2 tablespoons Unsalted butter
2 tablespoons Finely shredded fresh mint leaves
