The Carpigiani Gelato University in Bologna, Italy has long been a haven for those who want to learn how to make gelato properly, but enrollment has soared from 9,000 to 12,000 this year. What's more, international students now outnumber local students.
Students enroll at the Carpigiani Gelato University for one-week periods of study at a cost of 800 euros, which includes hotel accommodations. They'll learn how to make proper gelato using both traditional and modern techniques from veterans.
