Chinese Sesame Noodle Salad

This Chinese sesame noodle salad that has a complex flavor guaranteed to satisfy the taste buds.  This recipe calls for Maggi sauce which is a seasoning made from a Swiss company that lends a unique flavor to the dish.  You can find Maggi sauce at Asian markets or online.  If you don't want to go through the trouble locating it, simply omit it.  This recipe is vegetarian but feel free to add protein like chicken shrimp or even tofu (extra-firm).  Also the recipe is written in metric grams instead of the U.S. ounces.  Visit the Gourmet Sleuth for a conversion calculator.  This is a delicious pasta salad, perfect for warm weather.

Chinese Cold Sesame Noodles

Ingredients:

150 grams Spaghetti or egg noodles

1 teaspoon Salt

Water

1 tablespoon Cooked oil

80 grams Cucumber

80 grams Carrot

50 grams Arugula

½ Crisp apple

1 stalk Spring onion

1 handful Peanuts

Dressing:

20 grams Sesame paste

30 grams Smooth peanut paste

20 grams Sesame seeds, roasted

30 grams Maggi sauce

15 grams Caster sugar

10 grams Rice vinegar

5 grams Salt

5 grams Szechuan pepper, ground

50 grams Chilli flakes in oil

20 grams Sesame oil

2 grams Chicken bouillon

10 grams Minced ginger

10 grams Garlic paste

25 grams Hot bean paste

1 tablespoon Spring onion, chopped

3 tablespoons Water, cool
