
This beautiful pink lemonade is summer in a glass. It is refreshing, sweet, and has a hint of mint. This pink cocktail is made from chuncks of fresh watermelon pureed with mint simple syrup and lemon juice. If you are not a fan of the herbal flavor of gin, you can substitute with a more neutral spirit like vodka. You can serve this watermelon lemonade in mason jars for a down-home look or in fancy martini glasse. Either way this cocktail is a must-have at your next summer get together.
Ingredients:
3/4 cups sugar
2 cups water
4 sprigs mint
1 cup lemon juice - fresh squeezed
7 cups watermelon - cut into a 1" dice - approx half a medium watermelon
8 ounces gin
